Friday, May 6, 2011: Steak, rice, mixed vegetables
Saturday, May 7, 2011: Creamy chicken with broccoli and red pepper pasta
Sunday, May 8, 2011: Shrimp (I don't know what we're having this day. Being that it's Mother's Day, I've requested that I not have to cook, and that we have something with shrimp.) :)

Here's the recipe of the week: Creamy chicken with broccoli and red pepper pasta. You can always click on the link if you want to see the recipe on the Allrecipes website where I got it. We haven't actually tried this recipe yet, but it looks good and Anuhea wanted me to try it. Hopefully it's yummy!
Ingredients:
2 teaspoons oil
1 pound boneless skinless chicken breast halves, cut into bite-size pieces
2 cloves garlic, minced
2 cups broccoli florets
1 red pepper, cut into short thin strips
1 (10 ounce) tub Philadelphia Original Cooking Creme
2 cups hot cooked rotini pasta
2 tablespoons parmesan cheese, grated
Directions:
- Heat oil in large skillet on medium heat.
- Add chicken, garlic and vegetables.
- Cook and stir 7 to 8 minutes or until chicken is done and vegetables are crisp-tender.
- Add cooking creme; cook 2 to 3 minutes or until heated through, stirring frequently.
- Stir in pasta.
- Sprinkle with Parmesan and serve.
